Aztec Drink : Tepache . (yes , making alcohol in my closet)


Its basically Fermented Pineapple

With the SKIN of the pineapple…. you can make a really refreshing and delicious alcoholic beverage.

You need to dissolve about a cup of brown sugar in 2 or 2.5 liters of water.
Add some cinnamon … if you have the actual bark is better… and a couple of cloves and allspice grains.

Mix well and then add the pineapple skins to it… you have to try it every day till u feel the alcohol…



Put it in a pot .. if you have a clay pot is better… i think maybe because earth respects more the properties… earth respects itself.

Cover with a piece of cloth or shirt … whatever but allow it to breathe.

when you feel it starts getting bitter and you feel the alcohol add a cup of beer and more sugar … mix  and let it for one more day.

for me it took about 5 days to feel the alcohol and then 1 more day after i added the beer and sugar.

Check it everyday… this is an alchemy process … certainly there is no recipe you could follow.

Mine was delicious.  but still not like my grandma does it….

Miss u so much grandma . i promise ill help u cook all the xmas stuff ! =)

For its simplicity . this drink is commonly made inside the mexican prisons.

Fried Pineapple crepes

have you ever been so hungry and only found a pineapple in your cupboard ? you just cut the pineapple in slices and put them in a hot pan with butter and brown sugar….

the juice that gets created is from the gods… you might also add banana to this. enjoy !

i know… is too bad to buy pineapples and bananas in europe… but i took it from the waste  outside the market … 
so it hopefully won't get registered as somebody bought it and account for the next imports.

Krezy dilla

Sweet pumpkin . Cut it in pieces, make it boil till soft . Drain it. Smash it … put some chili , salt and pepper if you like.  I sliced a type of jalapeño in it.





Onion , on a pan with olive oil and some brown sugar. 

                    
Kebab pita … fill it with cheese or cheeses I used goat and gouda .
and add the other stuff as well. 



 At the end I added fresh celery … then put it on a pan till it gets cooked on the inside.

 mmmmmmmmm

Side dish . baked pieces of sweet pumking with salt , chili , and pepper. cayenne.

This food aligned my chacras. I hope it does the same on you.

Resurrection Emergency Snack

Have you been in the situation that you had a long day . you are fucking starving . and you have a sport course in 15 minutes ?

You don't want to eat so much and throw up while making  backflips , but you definitely need something entering da systemz. 

Well. I had that yesterday. So I sliced an apple. putted some peanut butter. some pirate yogurt as I told u before and jam. 

Is the lil push you sometimes need to prevent you from fainting. 

You can close it like a sandwich if you have a detachable jaw or just eat it in two slides.

I took this idea from a picture I saw in a Facebook page called  " Recetas Chingonas " … I know.. you'll be thinking .."but he said he didn't used recipes =S " .. fuck you !! I said I normally don't use or don't follow them … but this group is the boss and its enough to look at the pics to get ideas !

Food from Transylvania ?


Food in Transylvania , Rumania

I had to wait for 2 hours for my friend El Joaco to arrive to the Targu Mures airport. So I wandered around the airport , which is only corn fields. I ran into this guy that claimed that he had stolen some  infrared binoculars from a US army cargo …and I think he can be saying the truth because I saw a US army plane leaving the airport when I was arriving. 


Anyways , we used his super high tech binoculars to look at the chickens and at some corn … hahaha
In a wall near there he had written "cafe" hahha but that was a joke because he had only beer. So I had one with him and his friend had a cup strong alcohol (it was not even noon) .  and we discussed things about my origins and I was holding an article on human cooperation on which he had a lot of things to say… unfortunately I can just understand some oral rumanian. Although the written one is pretty clear. 




So I was really looking for food and not for beer. So I found this kiosk and asked for a hotdog which was the specialty and only dish in the kiosk. the only kiosk in kilometers…. and when the lady asked me 2 or 3 ? I said 3! I like number 3 more… but never thought she meant what she meant…...





In the mountains, we stayed with  Iosef , an eco loco revolutionary with thousands of stories ( e.g. he was deported from Belice in first class) . We went with him to take the cows out for a walk and pick some mushrooms since there aren't any stores up in the mountains ….. we where really motivated to find them …. or else… we would have to eat chess games.

We found some ! and his mom made some farmers polenta with real corn …. and it was amazing.


Just cut the mushrooms from the forest and the chili from the garden in small pieces and fry them with oil till they shrink and become crunchy. For the polenta I'm not sure because the woman didn't wanted us in her kitchen haha but I think Is just boiling corn fluor with some water and salt till all the water is lost and the texture is perfect.



Iosef is trying to persuade all his village to quit using pesticides and try to be self sufficient in every way. He makes the best cheese ever without even adding a chemical coagulant. and marmalades , liquors and other bio stuff. and he is trying to implement some energy systems and passive heating systems and eventually teach this to the community. 

So this was breakfast in the mountains.. milk from the cows… but we melted a portion of a chocolate bar we had. and the rest is story. scrambled eggs with chili and salami is what we had at hand. 

The cheese is smoked with pine wood and is just perfect. 



Cabbage soup with pork ribs… Amazing juice. We wanted to cry out of the greatness.

This is the Cluj style cabbage… also made Joaquín cry. is a cabbage full of surprises. like some chorizo and stuff like that.  eating and crying out of emotion is normal in cluj

Anyways. This a glimpse of Transylvania food. with poor textual descriptions because It doesn't even matter If i write a poem about every meal.. you still have to go  ! I will go back.

Zucchini Chips

Zucchini chips.



Slices of Zucchini 

Soak them in a beaten egg..

And then powder them into a mixture of flour , cheese , pepper , salt and chili flakes. 

I guess the ideal cheese would be parmesan and that fine breadcrumbs as the ones you use to make schnitzel. 
… but I had only gouda and flour… and it was great…=)

Just put a little bit of olive oil and then into the oven till they become crunchy. 




With salsa. for the mexicans.

Pirate Yogurt

Pirate Yogurt

This is how to copy/paste your favorite yogurt…=)

How is this possible ? Well . yogurt , by definition , is a living bacterial culture…
So yes.. you are eating living things every time you eat yogurt… yuuuuum.

So we will take that mixture of bacterias that the capitalist multinational company took so much time to domesticate , develop and patent and just put those cute microbes to work for us… forever….without any other wage but milk =)

Soooooooooooo……

Just take you favorite yogurt and take a clean semi-esterilized empty glass jar (or as many jars as you like)…

You just have to make a thin layer of yogurt in the insides of the jar.. be sure that all the inside is covered with a thin layer of yogurt..
To achieve this I just pour it through the inner wall of the jar and then spin it around slowly in an horizontal way till everything is neatly white…

Then just pour some milk above 3.5% fat inside…till the very top and close it tight…
You have to fill it to the very top because fermentation should be anaerobic… so…don't leave place for oxygen.

Leave it for 12 hours in a warm place…whatever works.. this time I just left it in my cupboard.
After 12 hours the exponential growth of the lactic bacteria is almost reaching its peak… so you can take into the fridge to continue the fermentation there…

The fermentation time is proportional to the viscosity of the yogurth.
You must experiment.. but here are some thumb rules:
12 hours makes a pretty runny yogurt … after that is starts getting thicker and thicker…
Do not open the jar constantly just to see how its doing because you can pollute it…



Flavor

Add flavor… honey , vanilla extract if u are in mexico… pumping seed oil if you are in austria… grains , fruits , whatever…

I normally use if for smoothies … so I leave it like that.

Sterilization process. 

I just add some boiling water inside the empty jar for a while… and close the lid to increase the pressure inside…. if you are obsessive compulsive you can additionally put the closed jar in boiling water.
Ive done this with the best care and with the least care… and it has never been contaminated.. so I guess it will work either way as long as you don't live in a shit hole or beatbox spitting above your yogurt.
